Lavaur is a commune in the département of Tarn, in the Occitanie region, in France. From a historical and cultural standpoint, the commune lies within the Lauragais, the former « Pays de Cocagne », linked both to the cultivation of pastel and to the abundance of its produce, and known as the « grenier à blé du Languedoc ». Exposed to an altered oceanic climate, it is drained by the Agout, the Nadalou, the ruisseau d'Assou, the ruisseau de Laragou, the ruisseau de Sézy, the ravin de Nadille, the ruisseau de Font-Célarde, the ruisseau de la Boutié, the ruisseau de la mouline, the ruisseau d'en Tournié and by various other small watercourses.
A little history
In 1025 the small fortified town is described in several writings. In 1035, the first mention of the castro de vauro appears. A castrum is thought to have existed to the north of this original castle (the site of Plô). In 1065, the Sauveté de Lavaur was established, granted to the monks of the abbaye Sainte-Foy de Conques.
